I’ve been experimenting with a few paleo muffin recipes and I think I’ve found my favorite so far. These almond muffins are delicious, very filling and are perfect for my on the go breakfast after my 6:30am Crossfit class. They really hold me over until lunch and they’re great warmed up in the microwave.
Almond Muffins
- 3/4 Cup Almond Butter
- 1 Cup Almond Milk (or Coconut Milk)
- 1 Cup Unsweetened Shredded Coconut
- 3/4 Cup Almond Flour
- 3/4 Cup Chopped Almonds (or any other nut really)
- 1/4 Cup Ground Flax Seed
- 1 Medium Ripe Banana Smashed
- 1/2 Cup Unsweetened Apple Sauce
- 1 Tsp. Vanilla
- 2 Tbs Honey
- 1 Tbs Cinnamon
- 1/2 Cup Fresh Blueberries (feel free to omit if you want)
1. Preheat oven to 400℉
2. Line a muffin pan with paper liners or spray with cooking spray
3. Combine all ingredients, adding in the blueberries last, and pour into your muffin pan
4. Bake for 15 - 20 minutesThe recipe makes 12 regular sized muffins. I’ve attached the nutritional information using all the suggested ingredients. Let me know if you try this recipe out. I’d love to hear how you like them.
